Blending Note:

I wanted to create a refreshing citrus-forward blend that could be enjoyed at any time of day. I've also tested this with ice after brewing and it works that way too (I prefer hot). One of the challenges with recreating certain flavors in herbal tea is that flavor and taste are separate in our brains, and we expect certain tastes (salty/sour/sweet/bitter) with certain flavors. I got the flavor where I wanted it to be but it wasn't quite living up to my expectations of a Citrus tea until I added a hint of citric acid. This is really what finishes rounding out the blend and gives it that zesty tart note which our brain expects when we taste citrus.
